Oatmeal Cottage Cheese Pancakes

These oatmeal pancakes make a terrific start to your morning. They are wheat free low GI and packed with protein and fibre.

Ingredients:

6 organic egg whites
1 cup rolled oats
2 scoops Vanilla Creme Protein Powder
1 teaspoon baking powder
1⁄2 cup cottage cheese
1 teaspoon vanilla
1⁄2 teaspoon cinnamon

1. Combine the eggs, Vanilla Creme Protein Powder and cottage cheese into a blender
2. Blend until smooth and combined
3. Add the rolled oats, baking powder and cinnamon then blend again until creamy
4. Cook in a non-stick pan over a medium heat for 2 - 3 minutes each side until golden.

Additions:

• Pure maple syrup or agave to drizzle over
• Natural yoghurt to dollop over
• Fresh strawberries to sprinkle over
• Sugar free strawberry jam to spread over
